2 lb. chicken wings, trimmed

1/4 teaspoon salt

1 teaspoon pepper

1 Tablespoon olive oil

1/3 cup Mango chutney (recipe below, or your favourite brand)
•
1 jalapeño, seeded and finely minced (more or less depending on how spicy you want)
•
1/2 lemon, juiced
•
1 Tablespoon Honey
•
2 Tablespoons Soy sauce
•
2 Tablespoons fresh cilantro, minced
•
2 Tablespoons of fresh mint, minced
•
5 Minute Mango Chutney
•
1 tablespoon oil
•
2 shallots or 1/2 a red onion, finely minced
•
1 jalapeño pepper (more or less to taste), finely minced
•
1 garlic clove, finely minced
•
3 teaspoons of fresh grated ginger
•
1/4 teaspoon of cumin
•
1/4 teaspoon of turmeric powder
•
1 mango finely minced—about 1 cup
•
1 Tablespoon of light brown sugar
•
1 Tablespoon of white vinegar
•
1 Tablespoon of water
•
⅛ teaspoon of salt
•
2 Tablespoon each of fresh mint, minced and fresh cilantro minced
