Deep Fry


3 1/2 C Sifted flour
1/2 tsp Salt
2 tsp Baking powder
1 tsp Baking soda
1/2 tsp Cinnamon
1/2 tsp Nutmeg
2 Eggs
1 C Sugar
2 Tbs Cooking oil (or shortening)
3/4 C Buttermilk (or sour milk)
Shortening (or cooking oil) for deep fat frying
1/2 C Superfine sugar mixed with 1 teaspoon of cinnamon


1Sift flour with salt, baking powder, soda, and spices and set aside. In a large mixer bowl, beat eggs, sugar, and oil at medium speed; add buttermilk. Add dry ingredients all at once and beat just until smooth.Cover and chill 1 hour. Meanwhile, begin heating oil in a deep fat fryer; insert deep fat thermometer. Roll dough 1/2” thick on a lightly floured surface and cut with a doughnut cutter; reroll and cut scraps.When oil reaches 375 F., slide 4 doughnuts into the heated oil. (Note; To transfer doughnuts without pushing them out of shape, use a slotted pancake turner dipped in the hot oil.) Fry doughnuts 2 to 3 minutes or until brown all over, using tongs to turn.
