1 big butternut squash (2-4 pounds)…Peel it, seed it and cut it into cubes

1 cup (some people think only half a cup is needed…. I disagree) grated Parmigiano Reggiano cheese (Whole Foods has a great cheese selection)

1/4 cup homemade pesto (It’s easy, just blend 4 garlic cloves, 3 basil leaves, 2 ounces Permigiano Reggiano, 1.5 ounces of pine nuts, and 2 ounces of olive oil, and voila! Pesto!)

2 tablespoons butter
•
Salt & Pepper to your liking
