250 g package chorizo sausage, sliced
1/4 cup (50 mL) chopped fresh Italian parsley
8 eggs
1 tsp (5 mL) paprika
1/4 tsp (1 mL) each salt and pepper
1/3 cup (75 mL) shredded Manchego or Parmesan cheese (optional)
