INGREDIENTS

1 small to medium whole spaghetti squash, cut in half and seeds scooped out
•
1 tbsp olive oil
•
2 cloves garlic, chopped
•
1 cup cherry tomatoes, cut in half
•
6-7 medium to large carrots, peeled and chopped
•
1 bunch asparagus, cut into 1-inch pieces
•
3 handfuls of spinach
•
juice of 1 lemon
•
salt and pepper to taste
•
1/2 tsp each: basil, oregano, herbs de provence (and any others you love!)
