INGREDIENTS
To Make and Freeze the Egg rolls
1 small onion, peeled and diced
1 red bell pepper, diced (optional)
1 jalapeno, seeded and minced (omit if you prefer milder, less spicy food)
2 garlic cloves, minced
1 tablespoon oil of choice
3 cups cooked chicken, diced or shredded
1 cup black beans
1 cup corn
1 cup shredded mozzarella, cheddar or pepper jack cheese
1/4 cup chopped cilantro or parsley
1 teaspoon chili powder
1 teaspoon ground cumin
salt and pepper to taste
1 pkg (20 ea) egg roll wrappers
water in a bowl to moisten and seal the egg roll wrappers
To Cook the Egg Rolls:
canola, peanut or vegetable oil (for deep-frying)
~or~
non-stick cooking spray or oil (for baking)
