Southwestern Breakfast Casserole

INGREDIENTS
•¼ cup butter
•1 bag (24 oz.) hash brown potatoes
•1 tablespoon olive or canola oil
•1 small onion, thinly sliced and chopped
•1 clove garlic, minced
•½ cup green pepper, chopped
•½ cup red pepper, chopped
•½ cup mushrooms, sliced and diced
•(stop here if you want to make this ahead. Add the remaining ingredients when you’re ready to bake it)
•24 ounces (3 cups) Southwestern Style
•Egg Beaters
•(or if you prefer, 12 eggs with ½ cup + 4 tablespoons milk)
•½ teaspoon salt
•¼ teaspoon pepper
•1 tablespoon hot sauce
•½ lb. ground sausage, cooked
•2-3 cups sharp cheddar cheese, shredded
•Salsa (optional)
