Southwest Sheet Pan Chicken

INGREDIENTS
1/2 teaspoon chili powder
1/2 teaspoon cumin
1/2 teaspoon paprika
1/4 teaspoon coriander
1/4 teaspoon cayenne pepper
1/2 teaspoon garlic powder
1 1/2 lbs. boneless, skinless chicken breasts, cut into 1-inch wide strips
2 tablespoons extra virgin olive oil, divided
1 medium red bell pepper, cut into thin strips
1 medium zucchini, cut in half lengthwise then cut into 1/2-inch thick half-moons
1/2 red onion, sliced
2/3 cup corn (fresh, frozen or canned)
Salt & pepper to taste
Serve with rice or tortillas
Optional toppings: Lime juice, shredded cheese, avocado or guacamole, salsa or pico de Gallo, fresh cilantro, sour cream, jalapeños, hot sauce, etc.
