INGREDIENTS

1 cup uncooked quinoa, rinsed well

2 cups vegetable broth (or chicken broth)

1 can of black beans (19 oz), drained and rinsed
•
1 cup of frozen corn
•
1 red pepper, (I used red and orange for color)
•
2 large tomatoes, diced
•
4 green onions, sliced
•
1/4 cup cilantro, chopped
•
1/2 cup olive oil
•
2 fresh limes, juiced
•
1 teaspoon cumin
•
1 1/2 teaspoons chili powder
•
cayenne pepper to taste
•
salt to taste
