1 medium bell pepper (diced (red or orange))
1 cup black beans (rinsed and drained)
1/2 cup tomatoes (or cherry tomatoes, diced)
1/4 cup cilantro
1 jalapeno (seeded and diced)
1/4 cup red onion (diced)
1/4 cup Cotija cheese (or feta cheese)
1/2 cup crispy tortilla strips (optional)
2 tablespoons fresh lime juice (divided use)
1/4 teaspoon chili powder
1/4 teaspoon cumin
2 tablespoons olive oil
salt & pepper to taste
