2 tbsp Cajun seasoning
1 cup white corn grits
4 oz goat cheese
6 tbsp butter
1 bunch green onions, chopped
Shrimp
1 1/2 lb jumbo Mississippi Gulf Shrimp, peeled and deveined (tail on)
2 tbsp Cajun seasoning
2 tbsp olive oil
Sauce
1 tbsp olive oil
3 cloves garlic, chopped
1 white onion, chopped
1 cup shrimp stock
12 oz dark beer
1–2 tsp Tabasco sauce
3 tbsp Worcestershire sauce
fresh cracked pepper, to taste
juice of 1 lemon
1 sprig rosemary
3 tbsp veal demi-glace
6 tbsp butter
