Southern Bourbon Fresh Peach Cobbler

  • 4 cups yellow peaches, sliced and pealed (blanch in boiling water for about 30s depending on ripeness and skins should slip off)
  • 1/2 cup white sugar
  • 1 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 fluid ounce Bourbon (optional)
  • 2 tablespoons fruit jam, blueberry and blackberry are very nice
  • 1 1/2 cups flour
  • 1 1/2 teaspoons baking powder
  • 3/4 teaspoon baking soda
  • 1/2 cup buttermilk
  • 1/2 teaspoon salt
  • 3/4 cup melted butter
  • 1 cinnamon stick
  • 1/4 cup orange juice
  • 1 teaspoon lemon zest
  • 2 tablespoons lemon juice
