I love French Onion Soup and have tried many variations. I seem to keep coming back to this one because it has such a rich flavor that we enjoy. I've also tried this with red wine and swapped out the cheese depending what I have on hand. Just make sure that the cheese melts well and gets gooey.

Ingredients

  • 4 tablespoons unsalted butter
  • 6 onions, sliced
  • 6 cloves garlic, sliced (can mince instead)
  • 1/2 cup dry white wine
  • 3 cups chicken broth (i usually use homemade)
  • 3 cups beef broth
  • 1 teaspoon dijon, optional
  • 4 slices french bread, toasted (sourdough is good)
  • 1 cup mozzarella cheese, shredded (can use swiss or gruyere if preferred)
  • 1/2 cup parmesan cheese, grated
  • salt and freshly ground black pepper, to taste

How To Make yummy french onion soup

  • Step 1
Saute onions and garlic in melted butter in a large saucepan, about 45 minutes. They should be browned and tender. (See note below).
  • Step 2
Add wine and simmer until reduced to a glaze, about 3-4 minutes.
  • Step 3
Stir in chicken broth, beef broth and mustard. Simmer 20 minutes. Season to taste with salt and pepper.
  • Step 4
Can be prepared 1 day ahead to this stage and refrigerated. Return soup to simmer before continuing.
  • Step 5
    Preheat broiler.
  • Step 6
Ladle soup into broilerproof bowls. Top each bowl with a slice of toasted bread and the cheeses.
  • Step 7
Broil until cheeses melt and bubble.
  • Step 8
NOTE: I find that my garlic can get a little crispy and bitter when added to the onions at the beginning. So I usually add the garlic during the last 10-15 minutes of caramelizing the onions which is enough time to add a nice flavor.
