yummy french onion soup

I love French Onion Soup and have tried many variations. I seem to keep coming back to this one because it has such a rich flavor that we enjoy. I've also tried this with red wine and swapped out the cheese depending what I have on hand. Just make sure that the cheese melts well and gets gooey.

Ingredients
- 4 tablespoons unsalted butter
- 6 onions, sliced
- 6 cloves garlic, sliced (can mince instead)
- 1/2 cup dry white wine
- 3 cups chicken broth (i usually use homemade)
- 3 cups beef broth
- 1 teaspoon dijon, optional
- 4 slices french bread, toasted (sourdough is good)
- 1 cup mozzarella cheese, shredded (can use swiss or gruyere if preferred)
- 1/2 cup parmesan cheese, grated
- salt and freshly ground black pepper, to taste
How To Make yummy french onion soup

Step 1Saute onions and garlic in melted butter in a large saucepan, about 45 minutes. They should be browned and tender. (See note below).

Step 2Add wine and simmer until reduced to a glaze, about 3-4 minutes.

Step 3Stir in chicken broth, beef broth and mustard. Simmer 20 minutes. Season to taste with salt and pepper.

Step 4Can be prepared 1 day ahead to this stage and refrigerated. Return soup to simmer before continuing.

Step 5Preheat broiler.

Step 6Ladle soup into broilerproof bowls. Top each bowl with a slice of toasted bread and the cheeses.

Step 7Broil until cheeses melt and bubble.

Step 8NOTE: I find that my garlic can get a little crispy and bitter when added to the onions at the beginning. So I usually add the garlic during the last 10-15 minutes of caramelizing the onions which is enough time to add a nice flavor.
