Vegetarian Sour Miso Soup

Super easy soup with lots of texture and flavor.

  •   1/3 c
    miso paste
  •   6 c
  •   8 oz
    tofu cut into squares
  •   5 oz
    shiitake mushrooms sliced
  •   3 Tbsp
    kombu seaweed cut into thin slices
  •   1 c
    shredded carrots
  •   3 Tbsp
    rice vinegar
  •   1 c
    chopped cilantro

How To Make

  • 1
    Mix miso paste and water together on stove top. Cook until miso has dissolved. Place remaining ingredients except cilantro and cook until kombu is tender. Ladle into bowls and garnish with cilantro
