vegetarian meatless ball soup
Stop here if your looking for a very healthy and delicious soup. It’s very low fat and full of fresh vegetables. You don’t even have to make the meatless balls, most all markets will have frozen in bags. I always keep some in my freezer because they are so good for many things. I’ve also included the ingredients and directions for making ground beef balls if you prefer to use that. Either way this is a real family pleaser that is great for lunch or dinner. If you bake at all make some baking powder biscuits to accompany the soup for a very satisfying meal.

Ingredients
- 1/2 cup celery stalk, diced
- 1/2 cup celery leaves, snipped
- 1 large onion, minced
- 2 medium carrots, sliced
- 1 cup cubed raw potatoes
- 2 cups vegetable broth
- - salt to taste
- 2 1/2 cups canned tomatoes, diced or stewed
- 8-12 - purchased vegetarian meatless balls
- - for beef balls: if you prefer to use real meat meatballs here’s what you’ll need: 1/2 cup fresh breadcrumb , 1 egg, unbeaten , 1/2 lb ground chuck
How To Make vegetarian meatless ball soup

Step 1Add all ingredients to Dutch oven.

Step 2Boil for 30 minutes. to 30 mins. (not a hard boil)

Step 3Drop 8-12 meatless balls into the soup and simmer for another 15 mins.

Step 4To make Beef Balls: Mix all ingredients and shape into 12 balls. Refrigerate 30 minutes and then drop into boiling soup and simmer 15 minutes.
