I made this with leftover veggies from a party platter.

Ingredients

  • 1 cup cauliflower
  • 1 cup squash
  • 1 cup zuchinni
  • 1 cup carrots
  • 1/2 cup tomatoes
  • 1/2 cup green peppers
  • 1/2 cup onions
  • 3 - garlic cloves
  • 1/2 stick butter
  • 4 cups chicken broth
  • 1 tablespoon complete seasoning
  • - salt/pepper to taste
  • 1/2 cup fresh cilantro

How To Make vegetable puree

  • Step 1
    In a large pot, gently boil everything
  • Step 2
    when fork tender, set aside, let cool
  • Step 3
    with a slotted spoon, put all the veggies in a food processor and puree, add butter, salt/pepper
