This was my mom's recipe. If anyone in the family was feeling bad, they could depend on Grandma's homemade soup to make them feel better!

Ingredients

  • 2 1/2- 3lb
    beef chuck roast
  • 4
    bouillon cubes
  • 1
    chopped onion
  • 3
    celery ribs, cubed
  • 5
    potatoes, peeled and cubed
  • 3
    carrots, cubed
  • 1 lg can(s)
    diced tomatoes
  • 2 can(s)
    tomato sauce
  • 1 can(s)
    green beans
  • 1 can(s)
    cream style corn
  • 1/2
    small head of cabbage, sliced thin
  • ·
    salt and pepper to taste

How to Make Vegetable Beef Soup

Step-by-Step

  1. Cut roast into cubes, put in lg pot, cover with water, add boullion cubes and bring to boil. Turn heat down to low, add onion and celery. Let simmer for one hour. Cook until meat begins to get tender. Add potatoes and carrots. Allow to cook about 15 minutes. Add rest of ingredients and continue cooking until vegetables are tender.
