this soup is made in my home every thanksgiving weekend... and it freezes well so..... and ya use whatever veggie you have on hand or what you like i've found it takes at least 1/2 the veggies being fresh

Ingredients
- 1 - turkey carcass[make sure you have some skin too]
- quart several water
- 1 large onion
- 1 large red bell pepper
- 1 large carrot
- - several cups what ever veggies you have,corn beans,peas,zuchinni,yellow squash
How To Make turkey veggie soup

Step 1take turkey carcass and break into pieces that fit in lg stock pot... add whole onion,celery,and carrot, add water to cover...cook several hrs till any meat falls off the bone... cool... strain pick out any meat and add to broth discard bones and veggies.....

Step 2add your fav veggies to broth[ i don't use potatoes because potatoes don't freeze well and most times there is soup to freeze]this is where ya need fresh as well as canned or frozen veggies added... cook till all veggies are tender... taste and season to taste with salt and pepper
