Ingredients

  • 1 tablespoon butter or olive oil
  • 2 - onions, chopped
  • 2 - garlic cloves, crushed
  • 20 ounces chicken broth
  • 1/2 cup water or 5 cups turkey stock
  • 1/2 teaspoon poultry seasoning
  • 1 cup small or medium egg noodles
  • 2 pounds frozen mixed vegetables
  • 2 cups leftover turkey, bite-sized

How To Make turkey - vegetable soup

  • Step 1
    Melt butter in a large saucepan set over medium heat.
  • Step 2
    Add onions and garlic.
  • Step 3
    Cook, stirring often, for 5 minutes.
  • Step 4
    Add chicken broth and water or turkey stock, and poultry seasoning.
  • Step 5
    Bring to a boil over high heat.
  • Step 6
    Stir in noodles.
  • Step 7
    Return to a boil, then reduce heat to medium.
  • Step 8
    Boil gently, uncovered, stirring often, for 10 minutes.
  • Step 9
    Add frozen vegetables and turkey.
  • Step 10
    Cover and simmer just until hot, about 2 to 3 minutes.
