Ingredients

  • 1 teaspoon olive oil
  • 1 - link italian sausage, remove casing, crumble
  • 1 large leek, white and pale green parts only, well rinsed, thinly sliced
  • 1 teaspoon garlic, minced
  • 1 stalk celery, thinly sliced
  • 1 cup yellow onion, chopped
  • pinch sugar
  • 2 pounds ripe tomatoes, peeled, seeded, chopped
  • 3 cups beef broth
  • - salt and pepper
  • 2 tablespoons lemon juice
  • 6 tablespoons basil leaves, finely chopped
  • - hot sauce, to taste

How To Make tomato soup with basil

  • Step 1
    Heat oil in large soup pot over med-hi heat. Add sausage, cook stirring until browned, about 10 minutes. Add leek, garlic, celery and onions; cook stirring until vegetables are lightly golden, about 10 minutes. Add sugar, tomatoes and broth. Bring to a boil, then reduce heat to med-low. Cover and cook until the mixture thickens, about 30 minutes.
  • Step 2
    Remove from heat and let cool about 10 minutes. Puree with hand blender. Season with salt and pepper. Heat soup over medium heat. Add lemon juice, 4 TBS basil and hot sauce. When heated through, about 5 minutes, serve garnished with remaining basil.
