Stove Top

1 tsp
olive oil
link italian sausage, remove casing, crumble
1 large
leek, white and pale green parts only, well rinsed, thinly sliced
1 tsp
garlic, minced
1 stalk(s)
celery, thinly sliced
1 c
yellow onion, chopped
2 lb
ripe tomatoes, peeled, seeded, chopped
3 c
beef broth
salt and pepper
2 Tbsp
lemon juice
6 Tbsp
basil leaves, finely chopped
hot sauce, to taste

1Heat oil in large soup pot over med-hi heat. Add sausage, cook stirring until browned, about 10 minutes. Add leek, garlic, celery and onions; cook stirring until vegetables are lightly golden, about 10 minutes. Add sugar, tomatoes and broth. Bring to a boil, then reduce heat to med-low. Cover and cook until the mixture thickens, about 30 minutes.
2Remove from heat and let cool about 10 minutes. Puree with hand blender. Season with salt and pepper. Heat soup over medium heat. Add lemon juice, 4 TBS basil and hot sauce. When heated through, about 5 minutes, serve garnished with remaining basil.
