Ingredients
- 1 teaspoon olive oil
- 1 - link italian sausage, remove casing, crumble
- 1 large leek, white and pale green parts only, well rinsed, thinly sliced
- 1 teaspoon garlic, minced
- 1 stalk celery, thinly sliced
- 1 cup yellow onion, chopped
- pinch sugar
- 2 pounds ripe tomatoes, peeled, seeded, chopped
- 3 cups beef broth
- - salt and pepper
- 2 tablespoons lemon juice
- 6 tablespoons basil leaves, finely chopped
- - hot sauce, to taste
How To Make tomato soup with basil

Step 1Heat oil in large soup pot over med-hi heat. Add sausage, cook stirring until browned, about 10 minutes. Add leek, garlic, celery and onions; cook stirring until vegetables are lightly golden, about 10 minutes. Add sugar, tomatoes and broth. Bring to a boil, then reduce heat to med-low. Cover and cook until the mixture thickens, about 30 minutes.

Step 2Remove from heat and let cool about 10 minutes. Puree with hand blender. Season with salt and pepper. Heat soup over medium heat. Add lemon juice, 4 TBS basil and hot sauce. When heated through, about 5 minutes, serve garnished with remaining basil.
