tomato soup, home made
(1 RATING)
This is the best homemade Tomato Soup. If you grow tomatoes, this is the recipe to try. This takes about 1/2 bushel of tomatoes. I got this recipe from a good neighbor and friend, Cindy Roth.

How To Make tomato soup, home made
-
Step 1Cook tomatoes, onions, and celery seed until soft. Put through a colander.
-
Step 2Paste: Mix sugar, flour, salt & pepper, and margarine (or butter). Stir and mix like pie dough. Add small amount of juice to make a thiner paste
-
Step 3Stir into tomato juice and bring to a boil. **Add lemon juice. Cook for 2 minutes. *Put into pint jars and water bath for 5 minutes *(I checked on the time for this day and age, and the recommended time has changed to 30 minutes.) **(They also recommend adding 7 to 8 teaspoons of lemon juice for more acid.) To serve: Bring to a simmer and serve. Add a little cream or milk to make it creamy or a dollop of sour cream to float on top of the soup.
