No cheese or cream in this broccoli soup, but it's easy and very tasty!

Ingredients

  • 1 tablespoon butter or spread
  • 1/4 cup onion, finely chopped
  • 1/2 teaspoon minced garlic
  • 4 cups chicken broth, low sodium or homemade
  • 1 cup tomato juice or v-8
  • 1 - .7 oz. packages italian salad dressing mix
  • 2 cups fresh broccoli, chopped
  • 1 cup brown rice, cooked
  • 1/16 teaspoon red pepper flakes
  • black pepper, to taste

How To Make tomato~broccoli~rice soup

  • Step 1
    Sauté onion and garlic in butter until onion is soft.
  • Step 2
    Whisk together the broth, juice and salad dressing mix until well blended and add to onions. (Note - If time allows, stir the dressing mix into the tomato juice earlier in the day and let sit in the refrigerator for a few hours to blend the flavors. Also, I like the Aldi and Lidl dressing mixes better than name-brand.) Simmer on low for 5 minutes.
  • Step 3
    Stir in broccoli, brown rice and peppers. Continue simmering for another 5 minutes.
