No cheese or cream in this broccoli soup, but it's easy and very tasty!

Ingredients
- 1 tablespoon butter or spread
- 1/4 cup onion, finely chopped
- 1/2 teaspoon minced garlic
- 4 cups chicken broth, low sodium or homemade
- 1 cup tomato juice or v-8
- 1 - .7 oz. packages italian salad dressing mix
- 2 cups fresh broccoli, chopped
- 1 cup brown rice, cooked
- 1/16 teaspoon red pepper flakes
- black pepper, to taste
How To Make tomato~broccoli~rice soup

Step 1Sauté onion and garlic in butter until onion is soft.

Step 2Whisk together the broth, juice and salad dressing mix until well blended and add to onions. (Note - If time allows, stir the dressing mix into the tomato juice earlier in the day and let sit in the refrigerator for a few hours to blend the flavors. Also, I like the Aldi and Lidl dressing mixes better than name-brand.) Simmer on low for 5 minutes.

Step 3Stir in broccoli, brown rice and peppers. Continue simmering for another 5 minutes.
