  • 1 tablespoon olive oil, extra virgin
  • 1 clove garlic,minced
  • 1/4 cup onion, diced
  • 1 teaspoon italian seasoning
  • 1/4 teaspoon crushed red pepper
  • 14 1/2 ounces chicken broth
  • 15 ounces cruched tomatoes
  • 5 ounces baby spinach

How To Make tomato and spinach soup

  • Step 1
    Heat oil in a Dutch oven over medium heat; add garlic and onion
  • Step 2
    Saute 5 minutes or until tender; stir in Italian seasoning, crushed red pepper, broth, and tomatoes.
  • Step 3
    Bring to a boil; add spinach.
  • Step 4
    Reduce heat, and simmer 10 minutes or until soup is slightly thickened.
