Ingredients
- 1 large carrot thinly sliced
- 4 cups chicken or vegetable stock
- 2 teaspoons sambal olek or sriracha sauce
- 2 - lemongrass stalks chopped into 3 pieces and bruised
- - juice of 2 limes
- 4 cloves garlic minced
- 8 ounces shittake mushrooms sliced
- 4 - green onions chopped
- 3 tablespoons cilantro chopped
- 2 tablespoons soy sauce
- 3 tablespoons sugar
- 1 cup bean sprouts
- - soybean chili oil (optional)
How To Make thai hot and sour veggie soup

Step 1Add the chicken or vegetable stock to a large pot. Add the lemongrass sticks, garlic, Sambal Olek, soy sauce and lime juice. Bring to a boil reduce to a simmer and simmer 20 minutes. Strain and discard the solids.

Step 2Meanwhile in a large skillet add a little oil and saute the carrots and mushrooms. Add to the strained stock. Add the green onions. and sugar. Cook about 3 minutes.

Step 3Top with cilantro, bean sprouts, and soybean chili oil if using and serve.
