This is one of my favorite autumn soups from one of my favorite tea rooms.

Ingredients
- 3 ounces butter
- 1/2 cup sweet yellow onion, chopped
- 1.2 cups ap flour
- 4 cups chicken broth
- 1 can 15 ounce solid pack pumpkin
- 2 cups heavy cream
- 1/4 cup apple juice
- - salt & white pepper to taste
How To Make tea room pumpkin soup

Step 1Over medium heat, saute onion in butter until translucent. Add flour and cook 2 mins. Slowly add broth. Add pumpkin. heat mixture thoroughly. Pureee and cream. Add apple juice and seasonings.

Step 2Granish with sour cream or parsley. Toasted pumpkin seeds make a nice topping too added right before serving.
