This is one of my favorite autumn soups from one of my favorite tea rooms.

Ingredients For tea room pumpkin soup

  • 3 oz
    butter
  • 1/2 c
    sweet yellow onion, chopped
  • 1.2 c
    ap flour
  • 4 c
    chicken broth
  • 1 can
    15 ounce solid pack pumpkin
  • 2 c
    heavy cream
  • 1/4 c
    apple juice
  • salt & white pepper to taste

How To Make tea room pumpkin soup

  • 1
    Over medium heat, saute onion in butter until translucent. Add flour and cook 2 mins. Slowly add broth. Add pumpkin. heat mixture thoroughly. Pureee and cream. Add apple juice and seasonings.

    Granish with sour cream or parsley. Toasted pumpkin seeds make a nice topping too added right before serving.
