This soup tastes even better after it's refrigerated overnight. It can be a satisfying meal with a green salad and garlic toast. It is a keeper for my recipe box, enjoyed by my family.

Ingredients

diced beef
2 Tbsp
olive oil
1 can(s)
beef or chicken broth (swanson's is good)
1 can(s)
kidney beans
1 c
thinly sliced carrots
1 c
thinly sliced onions
1 c
diced potato
1 small
zucchini, cut in 1/2 in. pieces
1 medium
garlic clove, minced
1/2 tsp
salt
1/8 tsp
pepper
2 can(s)
spaghetti in tomato sauce with cheese (spaghetti-os)
1/4 c
parsley
grated parmesan cheese
3 c
v-8 juice or tomato juice

How to Make Tasty Minestrone Soup

Step-by-Step

  • 1In a Dutch oven or large pot brown beef well in oil. Add V-8 or tomato juice, broth, kidney beans, carrot, onion, potato, zucchini, garlic, salt and pepper . Bring to a boil. Reduce heat, cover and simmer 20 minutes or until vegetables are done. Add canned spaghetti and parsley. Heat, stirring occasionally. Serve with cheese.
