This soup tastes even better after it's refrigerated overnight. It can be a satisfying meal with a green salad and garlic toast. It is a keeper for my recipe box, enjoyed by my family.

Ingredients
- 1 1/2 cups diced beef
- 2 tablespoons olive oil
- 1 can beef or chicken broth (swanson's is good)
- 1 can kidney beans
- 1 cup thinly sliced carrots
- 1 cup thinly sliced onions
- 1 cup diced potato
- 1 small zucchini, cut in 1/2 in. pieces
- 1 medium garlic clove, minced
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 2 cans spaghetti in tomato sauce with cheese (spaghetti-os)
- 1/4 cup parsley
- - grated parmesan cheese
- 3 cups v-8 juice or tomato juice
How To Make tasty minestrone soup

Step 1In a Dutch oven or large pot brown beef well in oil. Add V-8 or tomato juice, broth, kidney beans, carrot, onion, potato, zucchini, garlic, salt and pepper . Bring to a boil. Reduce heat, cover and simmer 20 minutes or until vegetables are done. Add canned spaghetti and parsley. Heat, stirring occasionally. Serve with cheese.
