Ingredients

  • 1 large can chicken broth
  • 2 cups water
  • 2 cups half and half
  • 2 cups shredded cheddar cheese
  • 1 cup flour
  • 2 teaspoons dried minced onion, or more
  • 1/2 teaspoon ground black pepper
  • 8 cups broccoli florets (see note)
  • 1 can swanson chicken broth with garlic
  • - shredded cheddar cheese
  • - parsley

How To Make t.g.i. friday's broccoli cheese soup

  • Step 1
    Combine chicken broth, water, half and half, cheese, onion, flour and pepper in a large saucepan. Whisk to combine and break up any large chunks of flour. Then turn heat to med-high, bring soup to a boil, then reduce heat to low. Add broccoli to soup and simmer for 30-40 min or until broccoli is tender but not soft. For each serving, put 1 cup soup into a bowl, top with 1 T cheese and pinch of parsley.
  • Step 2
    Note: one bunch of broccoli should do it, just cut into bite sized pieces and don't use the stems.
  • Step 3
    Note: I made in Jan of 05 and John loved it. I used a big can of swanson chicken broth with garlic. A pint of half and half makes a double batch and I used all of the cheese in the recipe rather than put anything on top. I also used garlic mixed with the black peppercorns, so if using regular pepper, add a bit of garlic powder.
