Ingredients

  • 2 cups onions chopped
  • 1 tablespoon butter
  • 6 cups chopped red and green bell peppers
  • 1 cup sour cream
  • 1/3 cup chopped fresh dill
  • 2 tablespoons fresh lemon juice
  • salt and pepper to taste
  • 2 cups water or vegetable stock

How To Make sweet pepper soup

  • Step 1
    In covered soup pot, saute onions on medium heat in the butter for 3 minutes (until barely softened)
  • Step 2
    Add the peppers and cook, covered, until just soft
  • Step 3
    Stir occasionally
  • Step 4
    In a food processor, whirl the cooked onion and pepper with the water or stock, sour cream, dill and lemon juice
  • Step 5
    Don't over process - small pieces of pepper should remain
  • Step 6
    Return soup to pot
  • Step 7
    Reheat and add salt and pepper
