Ingredients
- 1/2 pound ground beef, browned and drained
- 1 can tomato soup (10.75 oz.)
- 1 can petite diced tomatoes (14.5 oz.)
- 4 ounces mushrooms, chopped
- 1 1/4 cups chopped green pepper
- 1/2 cup chopped onion
- 2 tablespoons brown sugar
- 2 cups beef bouillon or broth
- 1/4 teaspoon garlic powder
- 1/8 teaspoon black pepper
- 1 cup cooked rice
How To Make stuffed pepper soup
-
Step 1While browning the ground beef, brown the mushrooms in another pan to remove some of their liquid.
-
Step 2In a slow cooker, combine all ingredients except the rice.
-
Step 3Cook on low for 4 to 6 hours or until the peppers and onions are tender.
-
Step 4Stir in rice and heat through, appx. 15 minutes
-
Step 5Notes: You can double the ground beef season appropriately if you prefer a meatier soup. For a cup of rice, cook about a 1/2 cup of rice in 1 cup of water according to package directions.
