Stuffed Pepper Soup

Slow Cooker Crock Pot


1/2 lb
ground beef, browned and drained
1 can(s)
tomato soup (10.75 oz.)
1 can(s)
petite diced tomatoes (14.5 oz.)
4 oz
mushrooms, chopped
1 1/4 c
chopped green pepper
1/2 c
chopped onion
2 Tbsp
brown sugar
2 c
beef bouillon or broth
1/4 tsp
garlic powder
1/8 tsp
black pepper
1 c
cooked rice


1While browning the ground beef, brown the mushrooms in another pan to remove some of their liquid.
2In a slow cooker, combine all ingredients except the rice.
3Cook on low for 4 to 6 hours or until the peppers and onions are tender.
4Stir in rice and heat through, appx. 15 minutes
5Notes: You can double the ground beef season appropriately if you prefer a meatier soup. For a cup of rice, cook about a 1/2 cup of rice in 1 cup of water according to package directions.
