Slow Cooker Crock Pot


  • 1/2 lb
    ground beef, browned and drained
  • 1 can(s)
    tomato soup (10.75 oz.)
  • 1 can(s)
    petite diced tomatoes (14.5 oz.)
  • 4 oz
    mushrooms, chopped
  • 1 1/4 c
    chopped green pepper
  • 1/2 c
    chopped onion
  • 2 Tbsp
    brown sugar
  • 2 c
    beef bouillon or broth
  • 1/4 tsp
    garlic powder
  • 1/8 tsp
    black pepper
  • 1 c
    cooked rice

How to Make Stuffed Pepper Soup


  1. While browning the ground beef, brown the mushrooms in another pan to remove some of their liquid.
  2. In a slow cooker, combine all ingredients except the rice.
  3. Cook on low for 4 to 6 hours or until the peppers and onions are tender.
  4. Stir in rice and heat through, appx. 15 minutes
  5. Notes: You can double the ground beef season appropriately if you prefer a meatier soup. For a cup of rice, cook about a 1/2 cup of rice in 1 cup of water according to package directions.
