Ingredients

  • 1/2 pound ground beef, browned and drained
  • 1 can tomato soup (10.75 oz.)
  • 1 can petite diced tomatoes (14.5 oz.)
  • 4 ounces mushrooms, chopped
  • 1 1/4 cups chopped green pepper
  • 1/2 cup chopped onion
  • 2 tablespoons brown sugar
  • 2 cups beef bouillon or broth
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon black pepper
  • 1 cup cooked rice

How To Make stuffed pepper soup

  • Step 1
    While browning the ground beef, brown the mushrooms in another pan to remove some of their liquid.
  • Step 2
    In a slow cooker, combine all ingredients except the rice.
  • Step 3
    Cook on low for 4 to 6 hours or until the peppers and onions are tender.
  • Step 4
    Stir in rice and heat through, appx. 15 minutes
  • Step 5
    Notes: You can double the ground beef season appropriately if you prefer a meatier soup. For a cup of rice, cook about a 1/2 cup of rice in 1 cup of water according to package directions.
