Ingredients
- 1 pound green or yellow split peas
- 1 teaspoon salt
- 1 teaspoon pepper
- - hambone with meat (see note)
- 2 medium onions, chopped
- 1 cup celery, chopped
- 2 medium carrots, sliced
How To Make split pea soup, mom

Step 1DO NOT presoak the peas. Put them into a kettle with 2 quarts water and meat. Slice and fry the salt pork if you use that. Add sesaonings and vegetables. Bring to a boil, cover tightly and reduce heat. Simmer soup 2 hours, stirring occasionally without mashing the peas too much. Remove hambone and cut off meat to return to soup. If soup is too thick, thin it with a bit of water or cream. Serve with sour cream if you like.

Step 2NOTE: instead of a ham bone you can use 1/4 pound salt pork, bacon, or sausage.
