Split Pea Soup
2 csplit green pea soup
8 cchicken broth, low salt
3 mediumcarrots, cubed
1 ccorn kernels, frozen
2 largeonions..yellow or vidalia
2 cfrozen peas
2 cfarfalle or small pasta
2 Tbspbutter or canola oil
How to Make Split Pea Soup
- Rinse split peas..In large pot add the water and chicken stock,,add split peas and pork hock and simmer for 30 to 40 minutes.
- Chop the carrots and add to pot ..remove hock when cool cut off the fat and dice the meat from the bone and return the meat to the pot.
- Add the pasta to the pot and cook for 15 minutes..saute the onions until tender..sprinkle them with the flour and stir to combine take out a cup of stock and mix it in with the onions and add this to the pot along with the frozen peas and simmer for another 10 to 15 minutes.
- When soup has cooled pour into 2 serving size containers and freeze. when soup has frozen I put the soup into baggies to make room for more goodies.
