Ingredients
- 2 slices bacon, cut up
- 1/2 cup onion, chopped
- 2 cups chicken broth
- 2 cups potatoes, diced
- 1/4 cup carrot, finely chopped
- 1/4 cup celery, finely chopped
- 1/4 cup white wine, dry
- 1.5 teaspoons thyme, fresh chopped
- 1.5 teaspoons sage, fresh chopped
- 1/2 teaspoon pepper
- 2 pounds spinach, fresh and chopped
- 2 cups milk
- 1/2 cup parsley, fresh and chopped
- 1/4 pound chorizo sausage, cooked links, sliced
How To Make spinach & potato soup

Step 1Cook and stir bacon in 3-quart saucepan until crisp.

Step 2Remove bacon with slotted spoon and drain; reserve fat in saucepan.

Step 3Cook and stir onion in fat until tender.

Step 4Stir in broth, potatoes, carrot, celery, wine, salt, thyme, sage and pepper.

Step 5Heat until boiling; reduce heat.

Step 6Cover and simmer for 30 minutes.

Step 7Stir in half of the spinach and cook for 2 minutes.

Step 8Stir in remaining spinach; cover and cook until spinach is just wilted, about 2 minutes.

Step 9Stir in milk, parsley and bacon; heat just until hot - Serve with sausage.
