olive oil
12 oz
shiitake mushrooms stems removed and caps thinly sliced
scallions thinly sliced
2 clove
garlic minced
1 Tbsp
peeled fresh ginger
2 c
chicken broth
8 oz
rice noodles or soba noodles
1 c
fresh spinach chopped
lime juiced
2 Tbsp
fish sauce

How to Make Spinach and Mushroom Noodle Bowl


  • 1Cook noodles according to package directions drain and set aside.
  • 2Add oil to large Dutch oven. Cook mushrooms, scallion whites, garlic, and ginger until mushrooms are tender about 4 minutes.
  • 3Add chicken broth and two cups of water and bring to a boil. Reduce heat and add noodles and spinach. Cook about 1 minute. Add lime juice and season with fish sauce.
  • 4Top with the green parts of scallions.
