Spinach and Mushroom Noodle Bowl
2 Tbspolive oil
12 ozshiitake mushrooms stems removed and caps thinly sliced
4scallions thinly sliced
2 clovegarlic minced
1 Tbsppeeled fresh ginger
2 cchicken broth
8 ozrice noodles or soba noodles
1 cfresh spinach chopped
2 Tbspfish sauce
How to Make Spinach and Mushroom Noodle Bowl
- Cook noodles according to package directions drain and set aside.
- Add oil to large Dutch oven. Cook mushrooms, scallion whites, garlic, and ginger until mushrooms are tender about 4 minutes.
- Add chicken broth and two cups of water and bring to a boil. Reduce heat and add noodles and spinach. Cook about 1 minute. Add lime juice and season with fish sauce.
- Top with the green parts of scallions.
