Ingredients
- 2 tablespoons olive oil
- 12 ounces shiitake mushrooms stems removed and caps thinly sliced
- 4 - scallions thinly sliced
- 2 cloves garlic minced
- 1 tablespoon peeled fresh ginger
- 2 cups chicken broth
- 8 ounces rice noodles or soba noodles
- 1 cup fresh spinach chopped
- 1 - lime juiced
- 2 tablespoons fish sauce
How To Make spinach and mushroom noodle bowl

Step 1Cook noodles according to package directions drain and set aside.

Step 2Add oil to large Dutch oven. Cook mushrooms, scallion whites, garlic, and ginger until mushrooms are tender about 4 minutes.

Step 3Add chicken broth and two cups of water and bring to a boil. Reduce heat and add noodles and spinach. Cook about 1 minute. Add lime juice and season with fish sauce.

Step 4Top with the green parts of scallions.
