Ingredients

    chicken broth
  • 3
    potatoes, peeled and diced
  • 1 1/2 c
    cabbage, chopped
  • 1
    leek, diced
  • 1
    onion, chopped
  • 2
    carrots, diced
  • 1/4 c
    fresh parsley, chopped
  • 1 tsp
    salt
  • 1/2 tsp
    freshly ground black pepper
  • 1/2 c
    sour cream
  • 1/2 lb
    bacon, cooked & crumbled (less if you prefer)
  • 1
    bay leaf
  • 1/2 tsp
    caraway seeds

How to Make Slow Cooker Irish Potato Soup

Step-by-Step

  1. Combine chicken broth, potatoes, cabbage, leek, onion, carrots and parsley into the base of your slow cooker. Stir in salt, caraway seeds, pepper and bay leaf. Cover, cook on Low 8-10 hours or on High 4-5 hours.
  2. Remove and discard bay leaf. Combine some hot liquid from slow cooker with the sour cream in a small bowl. Add mixture to slow cooker; stir. Stir in bacon.
