chicken broth

potatoes, peeled and diced
1 1/2 c
cabbage, chopped

leek, diced

onion, chopped

carrots, diced
1/4 c
fresh parsley, chopped
1 tsp
salt
1/2 tsp
freshly ground black pepper
1/2 c
sour cream
1/2 lb
bacon, cooked & crumbled (less if you prefer)
1
bay leaf
1/2 tsp
caraway seeds

How to Make Slow Cooker Irish Potato Soup

Step-by-Step

  • 1Combine chicken broth, potatoes, cabbage, leek, onion, carrots and parsley into the base of your slow cooker. Stir in salt, caraway seeds, pepper and bay leaf. Cover, cook on Low 8-10 hours or on High 4-5 hours.
  • 2Remove and discard bay leaf. Combine some hot liquid from slow cooker with the sour cream in a small bowl. Add mixture to slow cooker; stir. Stir in bacon.
