Ingredients
- 1 pound ground beef
- 1 medium onion, chopped
- 3 cups cabbage, chopped
- 1 cup frozen green beans
- 1 cup celery, chopped
- 1/4 medium green bell pepper, chopped
- 1/4 medium red bell pepper, chopped
- 1 cup carrots, chopped
- 2 cans diced tomatoes with basil, garlic & oregano, (14-1/2 oz. each)
- 1 can italian tomato paste (6 oz)
- 1 teaspoon italian seasoning
- 1-1/2 teaspoon minced garlic
- 4 cups water, boiling
- 1 tablespoon beef base (such as minor's)
- salt and pepper, to taste
- 1 cup minute rice, uncooked
How To Make slow cooker beef and cabbage soup

Step 1Brown ground beef in a skillet until cooked through; drain.

Step 2Place beef in a 6-quart slow cooker. Add onions, cabbage, green beans, celery, bell peppers, and carrots; mix well.

Step 3Add diced tomatoes, tomato paste, Italian seasoning, and garlic.

Step 4Add beef base to the boiling water, stir until dissolved. Pour over ingredients in slow cooker. Season with salt and pepper. Mix well.

Step 5Cover and cook on "high" setting for 4 hours, or "low" setting for about 8 hours.

Step 6During the last 20 minutes of cooking, stir in Minute rice. Cook until rice is done. Season with additional salt and pepper, if desired.
