Ingredients
- 2 pounds kielbasa sausage, cut into 1/4 -1/2 inch slices
- 1 package sauerkraut, not canned
- 4-5 - carrots, cut into one inch pieces lengthwise
- 4 - celery stalks, chopped
- 4-6 cloves garlic
- 8 ounces mushrooms, (shitake, oyster, or crimini), quartered
- 1 medium onion, diced
- - lots of black pepper to taste
- 1 1/2 quarts water
- 1 can beef broth
- 1 - 2 tablespoons sugar
How To Make slovakian sauerkraut soup

Step 1Place all ingredients except the can of beef broth and sugar into a BIG stew pot. Bring to a boil; turn down the temperature to low and simmer for about 3 hours. Add the beef broth and one tablespoon of sugar at a time. You will wan to taste the soup before adding more sugar. You don't want it to be too sweet. Cook for at least another hour. The Sauerkraut should turn dark when ready to eat.
