Fall turns me into a soup junkie. This season both myself and hubby are under the weather so I spend a lot of time thinking about comfort food that makes you feel warm and cozy all over. I needed fast soups as I do not feel well enough to spend all day in the kitchen. Thus this recipe was born. 30 minutes and not much standing time and dinner was served.

prep time 5 Min
cook time 30 Min
method Stove Top
yield 4 serving(s)

Ingredients

  • 12 ounces chopped frozen broccoli
  • 1/2 tablespoon onion flakes, dehydrated
  • dash - garlic powder
  • 4 cups water
  • 1/2 stick butter
  • 1 package cheese powder from mac and cheese box (save noodles for another recipe)
  • 1/4 cup flour
  • 1 cup milk
  • - salt and pepper to taste

How To Make simple broccoli cheese soup

  • Step 1
Simmer broccoli, onion flakes, garlic and butter in 4 cups of water about 30 minutes or until desired tenderness for you. Do not drain!
  • Step 2
mix the flour, cheese powder and milk together until well blended. (I use my tupperware gravy mixing cup)
  • Step 3
slowly pour flour/cheese mixture into broccoli mixture. let simmer until thickened. You may add milk if you prefer thinner soup. Salt and pepper to taste.
  • Step 4
Serve warm with cornbread for a perfect meal!
