This soup will be perfect for you northerners who are stuck in the snow...sorry girls...I am in Florida and if you are ever down this way look me up...maybe I will make the soup for ya...

Ingredients

  • 4 - bacon strips
  • 1 large onion, chopped
  • 3 medium carrots, chopped
  • 3 cloves garlic, minced
  • 1 jar spaghetti sauce
  • 4 cans beef broth
  • 16 ounces kidney beans, canned (drained and rinsed)
  • 15 ounces garbanzo beans, canned (drained and rinsed)
  • 2/3 cup uncooked small shell pasta
  • 2 teaspoons brown sugar
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1 cup frozen green beans
  • - grated parmesan cheese

How To Make shortcut minestrone soup

  • Step 1
    Cook bacon till crisp. In drippings cook onion & carrots 3 to 4 minutes till tender. Add garlic.
  • Step 2
    Stir in spaghetti sauce, broth and beans. Bring to a boil. Add pasta, brown sugar, basil & oregano. Add green beans. Simmer and cook for a while. Garnish with parmesan cheese.
