Ingredients
- 2 cups chicken or vegetable stock
- 3 cups green peas, thawed
- 1/2 teaspoon salt
- 1/2 teaspoon white pepper
- 1 teaspoon sugar
- 1 cup milk
- 1/3 cup sherry
- fresh parsley leaves
How To Make sherry pea soup

Step 1Combine the stock, peas, salt, white pepper, and sugar in a pan. Bring to a boil and cook for about 10 minutes.

Step 2Pour the mixture into a blender or food processor. Process until smoothish. strain through a fine mesh strainer pushing the solids to extract all the flavor out of it. Discard the solids.

Step 3Place the soup back into the pan and add the milk and sherry. Bring back to a boil and let simmer for about 5 minutes Serve garnished with parsley, mint, or basil.
