i had almost a full pan of potatoes from last night cuz potatoes didn't cook. what to do with them.... make soup....... this was sooooooooooooooo good....hubby had 3 bowls lol

- - leftover scalloped potatoes[bout 3 cups]
- 1 quart warm water
- 1 medium carrot,sliced thin
- 1/2 medium red bell pepper,chopped
- 1 package [10 oz] cubed ham
- 8 ounces sliced fresh mushrooms
- 1 pint 1/2&1/2
- 1 tablespoon dried celery leaves
How To Make scalloped potato soup

Step 1put potatoes and water in soup pan bring to boil lower temp cook bout 25 min then add carrot,bell pepper and ham cook 10 min more add mushrooms and 1/2&1/2 cook til hot [if u want a thicker soup sprinkle in instant mashed tater buds til as thick as u like] now laddle into bowls sprinkle a few celery leaves in each bowl serve with oyster crackers and ENJOY!!!!!
