I LOVE SOUP ! This is fragrant from the garlic and onions, and the broth is smokey and sweet from the tomatoes, smoked sausage, and kale !!This soup is light enough for summer and hearty enough for fall and winter ! A year 'round favorite of my family !!

Ingredients

  • 3 medium red potatoes, peeled and cut into chunks
  • 1 medium onion, chopped
  • 2 tablespoons olive oil
  • 1 pound fresh kale, chopped
  • 4 cloves minced garlic
  • 32 ounces chicken broth
  • 1 pound smoked kielbasa sausage, sliced into 1/4- inch slices
  • 1 can (15 ounces) white beans
  • 1 can (14-1/2 ounce) diced tomatoes, undrained
  • 2 - bay leaves
  • - salt and pepper, to taste

How To Make sausage and kale soup

  • Step 1
    In a dutch oven, add olive oil. Cook onions, and potatoes for 5 minutes, stirring occasionally. Add kale and garlic and stir. Cover and cook for 7-10 minutes until kale is wilted.
  • Step 2
    Add the remaining ingredients and bring to a boil. Reduce heat, cover and simmer for 15-20 minutes. Add salt and pepper to taste
  • Step 3
    Serve.
