Ingredients
- 1 medium onion chopped
- 2 tablespoons olive oil
- pinch of salt and sugar
- 6 cloves garlic minced
- 8 cups chicken broth
- 1 tablespoon better than bouillon roasted chicken bouillon
- 3 cups baby bella mushrooms sliced
- 15 ounces jar of sauerkraut with juice
- 1 cup ditalini or any small pasta of choice
- salt and pepper to taste
How To Make sauerkraut mushroom soup with pasta

Step 1Add oil to large pot. Add the onion and a pinch of salt and sugar. Reduce heat and cook until the onion is browned. Add the garlic and cook 30 seconds. Add the chicken stock, bouillon, mushrooms and sauerkraut with the juice. Bring to a boil. Cover and reduce heat to low. Simmer 1 hour

Step 2Add the pasta and simmer 15 more minutes. Taste and adjust for salt and pepper
