This is a quick & easy vegetable soup. Of course, you can always add hamburger or stew meat if that is your preference.

Ingredients For rustic vegetable soup

  • 1 jar
    picante sauce (16 oz.)
  • 1 pkg
    frozen mixed vegetables, thawed (10 oz.)
  • 1 pkg
    frozen cut green beans, thawed (10 oz.)
  • 1 can
    beef broth, undiluted (10 oz.)
  • 1-2
    baking potatoes, cut into 1/2" pieces
  • 1 md
    green pepper, chopped
  • 1/2 tsp
    sugar
  • 1/4 c
    finely chopped fresh parsley

How To Make rustic vegetable soup

  • 1
    Combine all ingredients except parsley in slow cooker. Cover; cook on low 8 hours or on high 4 hours. Stir in parsley before serving.
