Ingredients

  • 2 red peppers
  • 2/3 cup cooked rice
  • 1 jar marinina sauce
  • 1 can 8 oz tomato sauce
  • 1/4 pinch salt
  • 1/2 cup olive oil
  • 5 cups water

How To Make roasted red pepper soup with rice

  • Step 1
    Preheat oven to 400 degrees roast cut up red peppers in olive oil for 35 minutes turning after 20 minutes
  • Step 2
    Combine marinara sauce, tomato sauce, and water and cook for over medium heat for 30 minutes
  • Step 3
    Add roasted peppers after patting off olive oil.
  • Step 4
    Add cooked rice.
  • Step 5
    Simmer for 45 minutes.
