Ingredients

  • 4 cups broccoli florets
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 small onion
  • 4 cloves garlic minced
  • 2 tablespoons flour
  • 3 ounces vegetable stock
  • 1/2 cup heavy cream
  • 3/4 cup shredded swiss cheese
  • 1/4 cup shredded gruyere cheese
  • 1 tablespoon prepared horseradish
  • salt and pepper to taste

How To Make roasted broccoli swiss soup

  • Step 1
    Preheat oven 375 degrees. lay the broccoli out on a baking sheet and drizzle with 1 tbsp olive oil. Season with salt and pepper. Roast in oven about 20 minutes stirring once. Set aside
  • Step 2
    In a large pot add the remaining tbsp olive oil and butter. Add the onion and garlic and cook 2 to 3 minutes. Whisk in the flour. until it turns golden
  • Step 3
    Add the stock and heat until boiling. Stir in the heavy cream then add the broccoli and cheeses. Stir constantly until the cheese melts. Cook 10 minutes. Stir in the horseradish and season with salt and pepper
