So many people have never heard of Potato soup....I find it can be versatile and filling, as well as inexpensive and YUMMY. My in-laws RAVE at my Potato soup recipe!

Add to Grocery List

5-7 lb
potatoes, peeled, and quartered * or cut into about 1" cubes
1 medium
sweet onion, diced
8 oz
cream cheese
8 oz
sour cream
3 stick
1 c
heavy whipping cream
salt and pepper to taste


1/2 c
crumbled bacon
1/2 c
shredded cheese
1/2 c
cubed ham
1/2 c
velveeta cheese
1/2 c
whole kernel corn

How to Make Rikki's Potato Soup


  • 1Cook potatoes and Onion in enough water to cover until potatoes are tender, do not drain....unless you want a thicker soup
  • 2add butter, and cream cheese...stir constantly, until blended.
  • 3Add sour cream, Heavy Whipping cream, salt and pepper and any add in you desire...or None at all! heat through and enjoy!
