So many people have never heard of Potato soup....I find it can be versatile and filling, as well as inexpensive and YUMMY. My in-laws RAVE at my Potato soup recipe!

Ingredients
- 5-7 pounds potatoes, peeled, and quartered * or cut into about 1" cubes
- 1 medium sweet onion, diced
- 8 ounces cream cheese
- 8 ounces sour cream
- 3 sticks butter
- 1 cup heavy whipping cream
- - salt and pepper to taste
- ADD IN SUGGESTIONS
- 1/2 cup crumbled bacon
- 1/2 cup shredded cheese
- 1/2 cup cubed ham
- 1/2 cup velveeta cheese
- 1/2 cup whole kernel corn
How To Make rikki's potato soup

Step 1Cook potatoes and Onion in enough water to cover until potatoes are tender, do not drain....unless you want a thicker soup

Step 2add butter, and cream cheese...stir constantly, until blended.

Step 3Add sour cream, Heavy Whipping cream, salt and pepper and any add in you desire...or None at all! heat through and enjoy!
