This is a quick soup and an easy way to use up leftover rice.

  • 1 can(s)
    crushed tomatoes (large can)
  • 1/2
    onion, chopped
  • 1 Tbsp
  • 2 c
    boiling water
  • 1/2
    bay leaf
  • 1 tsp
  • 1/4 tsp
  • 1/8 tsp
    baking soda
  • 2 Tbsp
    bacon fat
  • 2 Tbsp
  • 1/2 c
    cooked rice

How to Make Rice & Tomato Soup


  1. Simmer tomatoes, seasonings, and water 1/2 an hour; discard bay leaf and press through a sieve.
  2. In the small pan add baking soda, bacon fat and cook with the flour until brown; add to the soup, stir until smooth. Add rice and serve.
