This is a quick soup and an easy way to use up leftover rice.

Ingredients

  • 1 can crushed tomatoes (large can)
  • 1/2 - onion, chopped
  • 1 tablespoon sugar
  • 2 cups boiling water
  • 1/2 - bay leaf
  • 1 teaspoon salt
  • 1/4 teaspoon paprika
  • 1/8 teaspoon baking soda
  • 2 tablespoons bacon fat
  • 2 tablespoons flour
  • 1/2 cup cooked rice

How To Make rice & tomato soup

  • Step 1
    Simmer tomatoes, seasonings, and water 1/2 an hour; discard bay leaf and press through a sieve.
  • Step 2
    In the small pan add baking soda, bacon fat and cook with the flour until brown; add to the soup, stir until smooth. Add rice and serve.
