Gardner friend gave me several kinds of peppers and mostly red so I decided to make a red pepper soup.

Ingredients
- 6 - sweet red peppers
- 1 - jalapeno peppers {small and seeded }
- 3 - leeks white part and only 1 iinch of the green
- 1/2 cup white or brown rice uncooked
- 1 cup water
- 10 cups chicken or vegetable stock
- 2 - medium size carrots rough chopped
- - s and p to taste

How To Make red pepper soup

Step 1Wash and remove seeds from peppers,,rough chop and add to large pot along with the water and broth..cut leek length wise and rinse under cold water to remove any mud collected between layers of the leek..rough chop and in small fry pan with 1 Tbsp of oil saute leek til tender about 10 minutes and add to pot.

Step 2Bring pepper to boil reduce heat and simmer for about 3/4 to an hour...cool slightly and in blender puree all contents..return pureed peppers to pot add the ricr and cook til rice is tender.....this soup freezes well and can be made in smaller batch..my theory is if you are chopping and cooking make a big mess and you always have frozen soup to thaw and eat for a quick meal....I freeze the soup in plastic container and when frozen I put them in plastic bags to save room and make more goodies.
