Ingredients

  • 4 cups dashi stock
  • 1 cup fresh shiitake mushrooms stemmed and thinly sliced
  • 1/4 cup chopped dried seaweed
  • 4 tablespoons red miso paste
  • 4 ounces tofu cut into small chunks
  • 3 - scallions chopped

How To Make red miso soup

  • Step 1
    Bring the stock to a simmer over medium heat and whisk in the red miso until it is dissolved. Add the mushrooms and seaweed and cook about 5 minutes until softened.
  • Step 2
    Add tofu and scallions and cook about 1 more minute.
