Ingredients

  • 4 c
    dashi stock
  • 1 c
    fresh shiitake mushrooms stemmed and thinly sliced
  • 1/4 c
    chopped dried seaweed
  • 4 Tbsp
    red miso paste
  • 4 oz
    tofu cut into small chunks
  • 3
    scallions chopped

How to Make Red Miso Soup

Step-by-Step

  1. Bring the stock to a simmer over medium heat and whisk in the red miso until it is dissolved. Add the mushrooms and seaweed and cook about 5 minutes until softened.
  2. Add tofu and scallions and cook about 1 more minute.
