This can easily be made with cabbage, pasta, corn, peas, beans or carrots. Leftover vegetables are a great addition...and easy.

Ingredients

  • 2 quarts tomatoes, fresh or canned, diced
  • 4-6 - potatoes, peeled, cubed
  • 2 stalks celery, diced
  • 5 - okra, fresh or frozen
  • 1 medium onion, chopped
  • - salt and pepper
  • 2 tablespoons bacon fat or oil

How To Make quick soup

  • Step 1
    Combine all ingredients, except for the okra, in an 8 quart pot. Cook on medium heat, 30 minutes. Add okra; cook 30 minutes or until potatoes are done.
